While the batter is cooking, place the blueberries directly onto the batter. Why? You can make lumpy pancakes if you put the berries in the batter bowl. One thing you should know: If the berries are added to the pancakes while they’re still on the griddle it won’t show the full extent of the berries. It’s okay! If you cut through the middle, they will be visible.

  • Non-stick griddles are best. Griddles can be uneven in heating. We had a cast-iron griddle which would make each pancake a completely different colour. It’s easy to use nonstick and it doesn’t need to be oiled.
  • You can experiment to determine the ideal heat level. It’s best to keep the heat at medium low, however it can vary from one stovetop to another. The pan should be heated for a couple of minutes.
  • Use approximately 1/4 cup batter to create a pancake. Medium-sized pancakes are possible.
  • Do not worry if your first pancake fails! You can use it to practice your skills, and then adjust the heat as needed.

Ingredients

  • All-purpose flour 1 cup
  • 2 tablespoons sugar
  • 2 tablespoons baking flour
  • 1 teaspoon Kosher Salt
  • 1 large egg
  • 3/4 cup + 2 tablespoons milk
  • 1 cup unsalted butter melted or neutral oil
  • half a teaspoon vanilla
  • 1 teaspoon vinegar or lemon juice*
  • 1 cup blueberries
  • Blueberry Sauce is an option

Instructions

  1. Mix together flour, sugar and baking powder in a large bowl.

    Whisk the eggs in a separate bowl. Next, add the milk, butter or oil, vanilla extract and lemon juice.
  2. Mix the dry ingredients with the wet until you get a batter. It will begin to thicken once it has sat for 1 to 2 minutes.
  3. Butter a skillet/griddle lightly with butter and then wipe away any excess grease using a paper towel. The skillet should be heated on medium-low heat. Place 1/4 cup of batter in a bowl. Add a handful of blueberries to each pancake. The pancakes should be cooked until they are golden brown and have bubbles on top. Flip them over and continue cooking until they are cooked to your liking.
  4. To keep the pancakes warm, place them under an inverted bowl. Continue with remaining batter. Adjust heat as needed to keep the pancakes at an even temperature. Add Blueberry Sauce or maple syrup to the batter immediately.
