Ingredients
- All-purpose flour 1 cup
- 2 tablespoons sugar
- 2 tablespoons baking flour
- 1 teaspoon Kosher Salt
- 1 large egg
- 3/4 cup + 2 tablespoons milk
- 1 cup unsalted butter melted or neutral oil
- half a teaspoon vanilla
- 1 teaspoon vinegar or lemon juice*
- 1 cup blueberries
- Blueberry Sauce is an option
Instructions

Mix together flour, sugar and baking powder in a large bowl.
Whisk the eggs in a separate bowl. Next, add the milk, butter or oil, vanilla extract and lemon juice. - Mix the dry ingredients with the wet until you get a batter. It will begin to thicken once it has sat for 1 to 2 minutes.
- Butter a skillet/griddle lightly with butter and then wipe away any excess grease using a paper towel. The skillet should be heated on medium-low heat. Place 1/4 cup of batter in a bowl. Add a handful of blueberries to each pancake. The pancakes should be cooked until they are golden brown and have bubbles on top. Flip them over and continue cooking until they are cooked to your liking.
- To keep the pancakes warm, place them under an inverted bowl. Continue with remaining batter. Adjust heat as needed to keep the pancakes at an even temperature. Add Blueberry Sauce or maple syrup to the batter immediately.
