These pickled green beans are irresistible and can be eaten straight from the jar. They also make a great condiment for a picnic lunch or a cheese platter. This old-fashioned recipe does not require fancy canning equipment. This quick pickles recipe is easy to make. All that’s required for this recipe are 20 minutes and some beans.

Ingredients to make dilly beans

Pickled green beans called dilly beans can be preserved with garlic, dill seed or fresh dill to infuse them with the taste of classic dill pickles. Dilly beans can be made as either a traditional canning recipe, quickpickles, or fridge pickles. The jar should then be stored in the refrigerator within 24 hours of making them. You don’t need any canning equipment to make quick pickles. This is why it’s our favorite method of making homemade pickles. These pickles can be kept in the fridge for up to one month, but they are not stable on shelves. These are the ingredients you will need to make dilly bean:

  • 1 wide-mouth pint canning jar
  • Web beans: The thinner, the better You can find French green beans and beans that are very thin.

  • Garlic

  • Bay Leaf

  • White vinegar

  • Sugar

  • Salt

  • Peppercorns
  • Dill Seed:not dried. (see below)
  • Fresh Dill: You can leave out if you prefer, however we love fresh dill as well as dill seeds

What’s the difference between dill seed and dillweed?

This recipe for dilly beans is simple: Dill Seed. This should not be confused with dried dill seed, which is also very important. You won’t detect any dill taste if you use dillweed. Here’s why:

  • Dill seed is a small flat, brownish-colored variety of the dill plant. They are useful in canning. Although the seeds impart a strong dill taste to preserved foods, they are not used often in cooking.
  • Dryed dill-weed refers to the green stems and leaves of this plant. Ranch Dip’s distinctive flavor comes from Ranch Dip’s use of this spice in its cooking. It can be used to preserve food in jars, but it retains a mild flavor.

Basic steps to making dilly beans

The assembly of the dilly beans takes only 20 minutes. For the best taste and texture, let it cool in the refrigerator for at least 24 hours. Waiting is what makes this recipe so difficult. These are the steps, or jump straight to the recipe.

  • Cut the green beans. Trimm the beans to fit in a pint jar. Mix in the bay leaf, garlic cloves and fresh dill.
  • Bring all the brine ingredients up to boil. Place white vinegar, sugar, salt and peppercorns in a saucepan and heat to boiling. (See the recipe below).
  • Add the contents to the container and let it sit for about an hour.
  • Refrigerate 24 hours. It helps infuse flavor and improves the texture of the beans. French or very thin green beans are the most tender because they have a crunchy and delicious flavor. You may find that some types of thick green beans taste slightly different after a day. If your beans are extremely thick, you might want to wait for 48 hours.

What is the maximum storage time for dilly beans? Keep homemade dilly beans in the refrigerator for at least one month. These pickles can’t be stored in a pantry. You can keep them in the fridge for several days.

  • 8 Ounces Green Beans (Thinner or French beans work best)
  • 2 garlic cloves, sliced
  • 4 sprigs fresh dill*
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 12 cup granulated Sugar
  • 2 tablespoons Kosher Salt
  • 1 tablespoon black peppercorns
  • Half a tablespoon dry dill seed* (not dried in dillweed)

Instructions


  1. Use hot soapy water to wash a large-mouthed pint mason container and the lid. Rinse and allow to dry.

  2. Cut the green beans to fit into a jar leaving about 1/2 inch of head space.

  3. Place the green beans and garlic in a jar.

  4. Combine the sugar, vinegar, salt, peppercorns and dried dill seeds in a saucepan. Stir occasionally to dissolve sugar and salt. Bring the mixture to boil.

  5. After boiling the brine, add it to the jar. To release air bubbles, tap the jar against the counter.

  6. Throw away any brine or add water to the jar if there are any green beans at the top.

  7. Secure the lid and let it cool down to room temperature for about an hour. For best taste, refrigerate for 24 hours. This recipe can be kept refrigerated for up to one month (the recipe is not shelf-stable span>
