How to test and ripen peaches

This peach galette is made with juicy peaches. They might be so ripe that they are almost hard to eat. To check if they feel soft, gently squeeze them. You will need to ripen peaches if they feel firm. These are some notes about ripening and how to make this delicious recipe.

  • How to Ripen Peaches. When the peaches look almost ready, place them on the counter and let them rest for at least 1 day. Place the peaches in paper bags if they’re too hard. The peaches will ripen quicker if you add a banana or an apple to the bag. Close the bag gently and leave the fruit to ripen for 1 to 3 days depending on how ripe they are.
  • Test the taste of the peaches. When you are ready to cook the recipe, test the taste of the peaches. It’s not ready if it tastes too sweet or tender.

Varieve the amount of sugar according to your taste

You feel like the peaches don’t have enough sweetness, but you are making the galette to celebrate an event. To compensate, you can increase the sugar. You can also add a bit more sugar if you prefer sweet desserts. This is how it works:

  • You can adjust the amount of sugar used in the filling to suit your taste. This peach galette works well with 6 tablespoons of sugar and ripe peaches. Half a cup of sugar is recommended for peaches that are slightly overripe.

Galette dough:

  • 11/2 cups (210g) all-purpose flour. Stirred and leveled
  • 1 teaspoon granulated Sugar
  • 3 Tablespoons Kosher Salt
  • 14 teaspoon baking flour
  • 10 Tablespoons Cold Unsalted Butter (or Vegan Butter)
  • 5 to 6 teaspoons of cold water
  • 1 eggs, for the eggwash

  • Turbinado sugar, for sprinkling


Filling:

  • 3 Cups (about 1 Pound; 3 to 4 Medium) Yellow Peaches. Cut into 1/4-inch Slices, and skin on*
  • 6 teaspoons dark brown sugar, packed**
  • 2 tablespoons vanilla Extract
  • 1 tablespoon cornstarch
  • half a teaspoon cinnamon
  • Salt
  • 2 Tablespoons unsalted butter or vegan butter

Instructions

  1. Mix the sugar, flour, kosher salt and baking powder in a large bowl. Cut the butter into smaller pieces. Next, use a pastry blender to mix the flour and sugar until it is well combined.

  2. Mix the flour with 4 tablespoons of cool water. Continue to mix the mixture slowly using a fork. Mix in the remaining 1 to 2 tablespoons water. Knead the dough with your hands until it comes together. You should resist the temptation to add water. It should be a smooth dough. Make a large ball of dough and roll it into a disk. Place the dough in a plastic bag or in a container covered with plastic wrap. Chill for at least 1 hour.

  3. Heat oven to 400°F.

  4. Combine the peaches thinly sliced with the sugar, vanilla cornstarch cinnamon and salt. Heat 2 tablespoons butter in a skillet on medium heat until it turns brown. Stir occasionally. It can quickly go from browning to burned, so keep an eye on the butter as it browns. Remove the pan from the heat immediately and add the butter to the bowl along with the peaches. Mix gently until combined.

  5. Roll the dough out on a floured surface into a 12 inch circle. You can leave the edges raw. Transfer the dough onto a piece of parchment paper placed on a baking sheet.
  6. Place the peaches in a circular arrangement on the dough, preserving the juices at bottom. You should leave at least 2 inches around the edge of your dough. You can make the pattern precise or looser – it’s up to you! You can leave out peaches you feel might be too full for the galette. To form a crust approximately 2 inches in diameter, fold the edges of the dough in over the filling. Place the rest of the juices in a bowl and gently pour them over the peaches.

  7. Use a pastry brush or whisk to coat the egg on the crust. Then sprinkle the crust with turbinado or granulated sugar.
  8. Bake galette in the oven for about 25-30 minutes, or until crust turns golden brown. Take the pan out of the oven, and place the parchment paper on a rack. Let cool. Allow to cool down to room temperature for about an hour before cutting into small pieces and serving. Serve it with vanilla ice cream. You can keep leftovers in the refrigerator for 4 days. Once they are ready, heat them up or bake them.

Use 1/2 cup brown sugar if you prefer a sweeter dessert, or if your peaches don’t have enough sweetness. Use light brown sugar instead, as this will make the filling dark.
