This type of dish is often found at cookouts and summer potlucks. While some recipes make use of a quick vinaigrette for watermelon dressing, we prefer a light drizzle of olive oil. These are the ingredients for watermelon and feta salad:


  • Ripe watermelon

  • Feta cheese

  • Fresh herbs: Basil or mint

  • Olive Oil

  • Salt and pepper

This concept has the best advantage that you don’t even need to measure. Cut the watermelon into cubes, then drizzle oil on it and garnish with herbs. That’s it! It’s delicious! We love the refreshing taste of watermelon feta mint, but we also like fresh basil.

This watermelon and feta salad recipe is very simple. It’s therefore important to purchase the highest quality ingredients. Unripe watermelon is bitter tasting and will taste flat. This salad does not need it! This is how you choose a great ripe fruit.

  • Buy watermelon season. This is the best way to find great fruits.
  • The field spot is where you should look. The bottom of most watermelon should be covered with a small patch. This is the area where the fruit was resting before they were picked. The watermelon will be ripe if the yellow patch appears. If it isn’t, it is unripe.
  • A watermelon should feel heavy for its size. This means that there is plenty of juice in the watermelon. This one can be hard to see in the grocery but it’s important to remember when shopping.

  • You can store leftovers for up to two days. This salad releases too much juice, so it is not as good as a regular salad. Although it works, this salad is better for casual lunches and not impressing guests at dinner.

Ingredients

  • 8 cups cubed ripe seedless watermelon (5 pounds or 1/2 medium watermelon)
  • 1 Tablespoon Olive Oil
  • 2 ounces feta cheese, crumbled
  • 4 basil or 6 mint leaves, minced
  • Lemon zest (optional)
  • 1 pinch of kosher salt for garnish
  • Optional: Fresh ground black pepper

Instructions

  1. Cut the watermelon into pieces and place it on a plate. Olive oil can be used to drizzle the watermelon. Add feta crumbles or basil, mint and kosher salt. Add lemon zest or black pepper if desired.
  2. Serve immediately. You can also refrigerate cubed watermelon in separate containers. It releases large amounts of water when it’s cut. Just before serving, assemble the salad. You can store leftovers for as long as 2 days.
